You may see Bouley and think “Bakery,” but these days, the top Tribeca chef is more interested in sharing health and wellness inspiration than croissants.
David Bouley, whose popular restaurant Bouley has since replaced his famed bakery, just opened Bouley Botanical, a private event space and organic indoor farm in Tribeca, that will supply his restaurants with fresh herbs and vegetables. It’ll also be a place where the chef shares his passion for live, nutrient-dense foods and wellness practices with New Yorkers in a new way.
“My goal is that all people have a living pantry in their own home, and I completely believe that food is healing,” Bouley says. “My restaurants give me a great platform to share my beliefs. I want to eat better myself and impart that knowledge to my customers.”
To achieve that, Bouley Botanical is hosting lectures with forward-thinking wellness gurus like Dr. Mark Hyman and celebrity nutritionist Oz Garcia, and yoga classes. The first yoga series takes place on Saturdays in March, with Dharma Yoga Center’s Brendan Lentz teaching and fresh-pressed juices and herbal teas prepared by Bouley after class. (You knew the healthy tonics were coming!)
And you’ll get a sneak peek at the impressive farming operation, which includes 24 growing boxes that house 70 plants and herbs, all grown in organic soil. Plus, a 16-foot-high living tower wall with an automatic irrigation system holding about 140 plants.
