Food 52’s Healthiest: Avocado Chocolate Mousse

Every Tuesday, we scan Food52′s delectable menu of recipes for the healthiest picks they’ve got—bringing you seasonal, scrumptious fare that’s really good for you.

Indulge yourself with this rich, dairy-free dessert. Coconut milk provides protein, and nutrient-rich avocado is a great source of healthy fats.  It’s no kale salad, but you’ll only need a tiny portion to revel in the sweet, creamy goodness.

Avocado Chocolate Mousse
Serves 2-4

1 ripe Hass avocado
4 ounces bittersweet chocolate
1/4 cup thick coconut milk (from the top of the can)
1/2 teaspoon vanilla extract
3 tablespoons agave syrup
1 pinch sea salt

1. In a heatproof bowl, melt the chocolate in the coconut milk over hot water, or in the microwave. Stir until smooth, cool slightly.

2. Put remaining ingredients in a food processor bowl, and add cooled chocolate mixture. Blend until completely smooth.

3. Spoon into dessert cups. Serve well-chilled, with a dollop of coconut cream, if desired.
