Hemsley KitchenJasmine and Melissa Hemsley are more than health-conscious chefs with a killer new cookbook on the horizon. The Hemsley + Hemsley duo is also an endless source of wellness advice, rattling off food sourcing factoids, and exalting the healthy benefits of slow cooking with the same giddiness one might recount a hot date.

When recently we sat down with the London-based sisters at Well+Good HQ, they got right to the point about cooking your own food, stating that if you live a fast, busy life, eating food that keeps your gut healthy is key. But it doesn’t have to be hard to find time for balance—or chopping veggies.

The Hemsleys’ new cookbook, Good + Simple, a follow-up to The Art of Eating Well, which launched last year and became an international bestseller, distills the Hemsley + Hemsley philosophy into digestible pieces, including how to easily plan a week’s worth of meals and make a soup-centric “body reset.”

“It’s a Trojan horse,” Jasmine says of Good + Simple, which debuts in early 2016. The 130 recipes are delish, hit a range of diets from vegan to Paleo, and “apply to a wider audience.” But then there’s this other layer that’s addressing “your approach to food, tips for mindful eating, and takes a holistic view of your health including your poo.” (The hardly squeamish Hemsleys are adamant that your number twos can tell you a lot about your health.)

Highly regarded in Ayurvedic cooking, mung beans’ blend of soluble and unsoluble fibers are super easy to digest and help to cleanse and tonify your colon (i.e. they’re excellent for gut health), the sisters say.

“We have a recipe for Mung Dahl—it’s our go-to any time and tastes even better the next day,” say the Hemsleys. “We load it up with spices like ginger, turmeric, garlic, onions, and sometimes add lemon. You could also add a handful of it to salads or stews, or make a nice hummus. And they’re so cheap! [In London,] a bag might be about a dollar.”

The Hemsleys (whose brand tote bags read Boil Your Bones) are huge fans of bone broth. “You’ve got this wonderful pre-digested protein, plus natural fats, keratin, and collagen—the building blocks for you to create something healthy quickly and easily,” they explain. “It’s great pre- and post-workout and it’s fortifying. It’s great when you need an immune boost. We call it the ‘essence of the animal kingdom’—like how green juice is the essence of the plant kingdom.”

Even the resulting fat that floats to the top has a purpose: “We don’t like to use vegetable oils—we like to use saturated fats, which are more heat stable. If you skim off some of the fat from your bone broth and store it in a jar, you have an amazing cooking oil.”

Not into bone broth-based cooking oil? No problem, say the chefs. “Get rid of your vegetable oils and use good quality, unbleached coconut oil and fry, bake, and roast with it. Use it in desserts and smoothies, put it in your hair or to take your eye makeup off.
