DIY Perfect Picnic Menu
Appetizer: Spicy Edamame Hummus and Crudité
This non-dairy, high-protein dip is rich, creamy, and will give you extra energy for surfing or frisbee. Chef’s choice on the selection of veggies served alongside for dipping.
Entree: Collard Wraps
Forget tortillas, which can become soggy. Instead, fill these fresh greens with your favorite sandwich fixings and roll them up. Check out the versatile list of ingredients in this Food52 recipe.
Side: Kale Chips
A serious upgrade to a bag of potato chips, these are just as addictive and crunchy, minus the cheapo fried carbs.
Dessert: Melisse’s Fresh Strawberries a L’Orange
Halve a pint of fresh strawberries into a big Tupperware container, then add a splash of orange blossom water (from Middle Eastern stores) to elevate the humble fruit. It combines with the berry juices during transport and is divine when it’s had an hour or two to sit. (Can’t find orange blossom extract? Just squeeze juice from half an orange over the strawberries and a pinch of orange zest.)
And to Drink: Coconut Water Fruit Spritzer
Stay hydrated with this electrolyte-packed yet elegant picnic beverage. To make it, combine a substantial pour of berry-flavored seltzer with coconut water and plenty of fresh mint. (The ratio is up to you.) Tip: Consider adding the coconut water and mint into half empty 2 liter bottle of seltzer for easy transport.
