Katherine Chen never had to learn how to “eat clean.”
“Being from an immigrant family, you eat what your parents gave you, in terms of what’s native to Chinese food,” the California native says. “The whole American junk food thing I was fortunate enough to miss out on, even though at the time I was like, ‘I want that!’”
But still, after a busy holiday season in the Bay Area (with all the clinking of glasses and nibbling on hors d’oeuvres that go with it—not to mention family dinners), Chen was ready for a reset. “My goal was to just feel better in my gut,” Chen says. (We hear ya.)
Food is important to Chen. She wants to make sure her 4-year-old son gets the nourishment he needs—as well as every other 4-year-old (and 40-year-old, for that matter). In 2009, the former tech advertising pro founded a nonprofit to fight hunger—cheekily named Boobs4Food—by tapping the super-social Silicon Valley set and organizing regular volunteering gigs at food banks, soup kitchens, and other organizations.
“It originally started because when Twitter came out, everyone was using it to brag about where they ate,” she says. “We love food, too, but our idea was, let’s use social media to advocate for places that need our help. If we can do that, it’s better than saying, ‘Oh my gosh, I just ate at this restaurant.’”
Results: What were the three most surprising things about Chen’s weeklong #juicervention to feel better in her gut?
1. She felt sharper during her busy days
“When you’re eating more junk food or unhealthy or heavy stuff, it slows your body and mind down,” Chen says. “I felt like my mind was clear and I had more energy and clarity throughout the day. Even doing yoga, I felt like I was able to focus better.”
2. She had nutrition during a migraine headache
“Normally when I get a migraine, it makes me very nauseous: I have to shut the blinds and keep the room dark and it’s really hard to eat,” she says. “I usually just drink a ton of water. But I was able to have the juice, and that nourishment really helped me. It was soothing.”
3. She felt more energy during her no-joke fitness regimen
“The challenge for me is that I work out a lot, so I need good fuel,” says Chen, whose main fitness hang in the Bay Area is Transform Fitness Studio, plus fave workouts like Flywheel, Megaformer-style Pilates, and yoga.
