I’ve had a serious problem with breakfast lately: I feel my best when I eat one high in protein, but I’m sick to death of eggs. I know I’m not the only one; I’ve talked to women in my office who feel the same, and even noticed fitness model Jamie Eason complaining of the same thing on her Facebook page earlier this week.
But it’s not an easy one to solve; most other breakfast foods come with a hefty serving of carbohydrates, or involve eating a lot of meat which, let’s just say, isn’t for everyone.
So I scoured the internet for some options–that don’t involve mixing protein powder into baking mixes or making baked goods out of egg whites (you’d be surprised).
Here’s what I found:
A collection of tofu scramble recipes would be a fairly disappointing way to take this gallery, but this variation looked too delicious not to include. The important part is all of the spices used; from there, add whatever vegetables, salsas, or other condiments you want.
