1 cucumber, peeled, trimmed, seeded, and thinly sliced
1 small red onion, thinly sliced
Sea salt and freshly ground pepper
1 ½  cups grape tomatoes or cherry tomatoes, halved
1/2 pound watercress
2 large ripe avocados, peeled, pitted, and cut in lengthwise slices

Hempseed Vinaigrette

1 tablespoon stone-ground mustard
1/4 cup white wine vinegar
1 tablespoon finely diced shallots

1/2 cup extra-virgin olive oil
1 tablespoon hempseed oil

1 teaspoon chopped fresh chives
1 tablespoon chopped fresh basil
2 tablespoons hempseeds
Freshly ground pepper
