You’ve heard of farm to table. Well, One&Only Palmilla, the luxe spa resort in Los Cabos, Mexico, where celebs go to recoup, riffs on the concept with its new “Palm to Popsicle” program.

During a stay, guests can pick a ripe coconut from the resort’s bountiful palm trees (well, point to the coconut—a gardener climbs the tree and cuts it down), then head to the kitchen where a chef breaks open the shell and helps you make a super-fresh coconut popsicle.

How to get a bit of this frozen coconutty tropicalness without a stamp in your passport?

One&Only Palmilla Coconut Popsicle
Servings: 12

2 cups of fresh coconut water
2 cups of chopped coconut meat
1 1/2 cups of unsweetened coconut milk
2/3 cups of pure agave syrup
2 ounces of fresh lime juice
Grated zest of one lime

Place all of the ingredients in a blender and blend at medium to fast speed for one minute. Fill a popsicle mold and place in freezer; when half frozen, remove from freezer and insert popsicle stick. When completely frozen, loosen the popsicle by running warm water over the outside of the mold. Enjoy!
