My Favorite Green Juice Recipe: Eden Grimaldi

The PR pro behind some of NYC's hottest restaurants and cult-fave natural skin-care lines shares her (surprisingly simple) beauty blend.

Eden GrimaldiAs the brains behind MediaCraft, a boutique PR firm that represents some of New York’s coolest restaurants (like Freemans and Peels) and cult-fave natural beauty brands (like REN and ILIA), Eden Grimaldi is a true insider when it comes to good eats and great skin care. Basically, she’s the type of friend we all wish we had on speed dial—someone who knows what’s next (and can score a sample…or a reservation) eons before everybody else.

And because she’s a food-and-beauty aficionado, Grimaldi understands the benefits of good nutrition, even if her New York lifestyle makes that a tad challenging.

Enter her obsession with juicing: “I like to juice because I enjoy drinking vegetables I wouldn’t normally eat,” she says. “They make me feel clean.”

Here, the vegetarian PR maven shares her go-to green juice recipe—which she drinks with meals, rather than as a replacement. Don’t be surprised if it pops up on the menu of the next hot eatery… —Jamie McKillop

Tropical Greenade

1 bunch kale
1 bunch spinach
1 bunch parsley
2 stalks celery
1 medium cucumber
1 generous handful of fresh pineapple
(Optional: Add one small knob of fresh organic turmeric or ginger root, and the juice of 1/2 lemon for more of a kick.)

Juice all together—or blend in a Vitamix or NutriBullet. Enjoy!
