But the Carrol Gardens resident—who is due to deliver her first child any second now—was inspired to hop on the green juice bandwagon by her pregnancy.
“Your diet becomes a much bigger deal to you,” she explains. “I can feel it more intensely when I’m not eating healthy, so it’s easier to make eating healthy a priority.”
Grinspan started throwing greens into the Vitamix to up her iron levels, and now, she sips a juice every morning.
Here’s her simple-and-delicious go-to recipe. —Lisa Elaine Held
1/2 cup water
1 cup green grapes
An entire small lime, peeled
1/2 yellow pepper, seeded
1/2 medium apple, halved
1 carrot, halved
1 cup fresh spinach, washed
1 cup ice cubes
Place in powerful blender like a Vitamix (some of them can’t handle the lime) and blend for one minute.
