Veronica Bosgraaf is the woman behind Pure Bars, the fastidiously gluten-free, organic, non-GMO, and vegan nutrition bars sold in bright, eye-catching wrappers at Whole Foods and beyond.
The Michigan resident became a food-apreneur when researching what could keep her six-year-old daughter nourished, after a trip to the petting zoo inspired the little one to become the family’s first vegetarian.
Fortunately Bosgraaf’s grown-up tastes—and her desire to prevent us from grabbing anything unhealthy when we’re famished or on the go—have her creating innovative items like the first-ever bar we’ve seen made with “ancient grains” (quinoa, amaranth, flax, and hemp).
Her inspiration comes from researching superfoods and of-the-moment food trends, and following the thread of how she herself likes to eat. That includes blending up juices with kale, a “superstar vegetable” in her book. Oh, and it has to taste good.

Superstar Kale Juice
5–7 stalks of kale (any variety)
2–3 large d’Anjou pears
½ cup fresh cranberries
1/8″ slice of ginger
