My Weekly Workout: Nick Anderer

Between lunch and dinner service, some chefs handle paperwork or run errands. Nick Anderer goes to SoulCycle.

The executive chef at New York hotspot Maialino (who previously cooked at Babbo and Gramercy Tavern), gained 25 pounds when the Danny Meyer trattoria first opened, thanks to insane hours and pork. Lots of it.

“I was at that tipping point, and I thought, ‘I need to turn this around or I’m going down the road to fat chef-dom,'” Anderer says. “I decided to take a stand.” Since he found it virtually impossible to eat light while serving things like Fettuccine alla Bolognese and olive oil-whipped potatoes (um, yum), Anderer started seeing a personal trainer three times a week.

Then, two of his friends brought him to a SoulCycle class, and he was hooked. “With a good instructor, it’s an extremely efficient and fun 45-minute cardio blast,” he raves. He even hosted a sold-out ride to raise funds for the Bed-Stuy Campaign Against Hunger last month.

Here’s what a week of fitness-amid-Italian-food looks like for the East Village resident, who often fits in two sweat sessions a day. All for the love of pork and pasta, right?! —Lisa Elaine Held

Monday: I can’t think of a better hangover cure than SoulCycle, which is often what I need the morning after a good weekend. But today I’m not hungover at all…in fact, I’m very well-rested, so I sign up for a 5:00 p.m. session with one of my favorite instructors, Rique Uresti, who leads a very fast-paced class. Generally speaking, this is a great workout time for me, as it’s between lunch and dinner service.

Tuesday: Sometimes my body needs a rest. This is one of those days. I normally like to use a weekend day for recovery, but my body was just telling me it was time. It’s not strictly mathematical, but I tend to take off one complete day every two weeks.

Wednesday: Coming off the rest, I decide to double up on workouts today. Starting off with a 9:30 a.m. SoulCycle class with Karyn Nesbit, another very high-energy class, is more effective than a morning coffee. After a really busy lunch service [it was Restaurant Week when Well+Good spoke with Anderer], I head out at 5:00 pm to see my trainer Kevin at New York Health and Racquet Club, who puts me through a pretty rigorous, plyometric-heavy routine. Burpies, pull-ups, box jumps, lunges…not a lot of weights, but lots of body resistance, cardio, and abs.

Thursday: Surprise, surprise…another SoulCycle class at 9:30 a.m., this time with my favorite instructor, Jolie Walsh. It’s definitely the hardest class, at least for me. The session is always full of what she calls “crack-fast jogs,” which are really just sustained three or four minute sprints out of the saddle. Pretty intense. After lunch service, I planned to hit the gym, but I got bogged down with midday meetings.

Friday: It’s been a while since I woke up to a morning with no snow, ice, rain, or just overall crappy winter weather. Today is no gem either, but at least it’s above 30 degrees and void of frosty downfall, so I decide to go for a four-mile run along the East River. I shower up and head to a 10:00 a.m. appointment with Carin Gao, a Pilates instructor and overall wellness guru, who I see to get my body aligned right—though I clearly don’t see her often enough. This is my form of preventative maintenance as someone who spends much of his day hunched over. Later, I pay Kevin another 5:00 p.m. personal training visit. He decides to test my muscle endurance with some weights, working primarily on chest, shoulders, and biceps through a series of low-weight, high-rep routines.

Saturday: I’m back on the bike for the Saturday morning “Soul Survivor” with Jolie Walsh. This is the one class that I try to never miss—basically, you tack on another 15 minutes to her already insanely difficult 45-minute, sprint-heavy routine. It sets the tone for the rest of the weekend and I always walk out feeling like I’m burning calories for the next two hours, which is great because I normally follow it up with a beastly brunch. It’s worth mentioning that my wife tried to convince me to take an SLT class—which I love—before “Soul Survivor,” but I opted for the extra hour of sleep and let her rock it out solo. Sunday: Several colleagues have been pushing me to try Barry’s Bootcamp so I decide to give it a whirl in Tribeca with Layla Luciano at 11:30 a.m. It’s a pretty intense one-hour group session where you jump back and forth between intervals on a treadmill and floor exercises with weights. Good times. With the workout done, I head to Locanda Verde…to stuff my face. —Lisa Elaine Held
