When it comes to eating a plant-based diet, sometimes getting enough muscle-loving protein can be a challenge. Just ask Carrie Underwood, who’s been following a vegan diet for years. One of her favorite ways to make sure she’s getting enough of the nutrient is by adding it to her smoothies alongside another surprising (yet healthy) ingredient: beet juice.

No doubt the country music superstar knows that a good dose of dietary nitrate from the root vegetable’s been shown to not only boost workout performance, but also brain power. One of her favorite blends is berries, protein powder, almond milk, and beet juice, BTW.

“I’ve started looking forward to it,” admits the Calia activewear founder. “A lot of times to work out and be able to go to work, I don’t have time to sit down and eat lunch. So I’ll make a smoothie and then drink it on the way,” she says. Adding this to the list of lazy girl-lunch options, stat.
