Tangy Cauliflower Mash

  1. Break up your riced cauliflower to make sure there are no large chunks.

  2. Melt 1 Tbsp of ghee in a shallow pot over medium heat.

  3. Add riced cauliflower, and cook over medium heat for about 2-3 minutes until starting to soften.

  4. Add minced garlic and cook for an additional 2-3 minutes.

  5. Cover with 2 cups of water and 2 tsp of salt.

  6. Cook 10-12 minutes.

  7. Strain, reserving the cooking liquid.

  8. Place the cauliflower into a food processor or high speed blender. Blend on low, slowly adding 1/2 cups of the reserved cooking liquid until you reach the desired consistency.

  9. Add 2 tsp of Greek yogurt, and blend to incorporate.

  10. Taste and adjust seasoning. Mix in 1/4 cup of chives.

  11. To serve, garnish with freshly cracked pepper and additional minced chives. Enjoy!
