Ingredients

  • Eggland's Best eggs
    Sponsored
    4 Eggland's Best eggs large
  • Sriracha sauce
    2 Tbsp Sriracha sauce
  • carrots,
    ½ cup carrots, julienned
  • purple cabbage,
    ½ cup purple cabbage, shredded
  • green onion,
    ¼ cup green onion, diced
  • black pepper
    ¼ tsp black pepper
  • jasmine rice
    2 cups jasmine rice
  • soy sauce
    2 Tbsp soy sauce low sodium
  • bibb lettuce
    6 leaves bibb lettuce

Instructions

  1. In a medium bowl, whisk Eggland's Best eggs and Sriracha sauce together until well combined.

  2. In a large non-stick skillet over medium-high heat, cook veggies until they're crisp. Drizzle the egg mixture into the skillet, stirring as you drizzle.

  3. Add black pepper, rice, and soy sauce to skillet and stir-fry for three to four minutes or until eggs are set. Stir in green onions.

  4. Remove from heat. Divide mixture among the lettuce leaves then enjoy!
