Emmy Rossum Has the Most Bananas (and Delicious) Way to Get Her Collagen Dose

Sneaking health-boosting ingredients into your favorite homemade breads, muffins, and desserts might just be the ultimate #bakinghack. Ice-cream-brownie sandwiches with a kick of turmeric? Byeee, inflammation. Prebiotic gingersnaps? A gut-health #win. And now, thanks to Emmy Rossum, even an a.m. slice of banana bread can come with a side of complexion-illuminating collagen peptides.

In a recent Instagram Story, the Shameless star and meal-prep visionary shares her recipe for banana-pumpkin loaf bars that you can "cut into bite-sized pieces for snacks or larger bars for breakfast or husbands," she writes. Not only is the recipe paleo-friendly and gluten-free, but Rossum also swears that the smell will waft with the same enticing draw of freshly baked cookies through your living space (*drools*).

To go straight from batter-mixing to loaf-munching in less than 45 minutes, first gather your ingredients. You'll need 3 very ripe bananas, 2/3 cup of unsweetened pumpkin puree, 1 Tbsp of pumpkin pie spice, 1 tsp of cinnamon, 2 scoops of collagen peptides (Rossum recommends Vital Proteins), 1 tsp of vanilla, extract, 1/2 cup of crushed walnuts or pecans, 1 egg, 1 and 1/2 cups of almond flour, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp of apple cider vinegar, a pinch of salt, and an optional 1 Tbsp of maple syrup or a pinch of monk fruit.

Next, preheat your oven to 350°F and mash your bananas in one bowl until they're free of clumps. In a separate bowl, combine all your dry ingredients. Pour the banana mash into the dry mix, and don't be afraid if the concoction doesn't look like a typical batter. According to the actress, "It will look wet and soupy. You'll be like, huh? But trust."

Finally, spray a foil-lined baking dish with olive oil or your preferred anti-stick agent, pour the mix into the pan, and pop the whole thing into the oven. In just 35 minutes, you'll have a crowd-pleasing treat that you can eat any time hunger—or less than luminescent skin—strikes.
