The 10-Minute, No-Bake Cookie Dough Bar Recipe to Make This Valentine’s Day (and All Year Long)

Justin's ribbonWelcome back to Well Done, Well+Good’s seriously tasty food (and drink!) video series, featuring easy-healthy-gorgeous recipes from the wellness scene’s buzziest chefs, nutritionists, and Instagram foodies.

Remember that Friends episode where Monica and Chandler decided to give each other homemade Valentine’s Day gifts? If only they had this ten-minute recipe for no-bake cookie dough bars.

Luckily, you do. And with an added helping of protein, it checks off your sweet-tooth and better-for-you ingredient boxes, to boot.

You can thank Justin’s® Classic Almond Butter and Justin’s® Dark Chocolate Peanut Butter Cups for the spoonfuls of nutty, delicious flavor. “They're delicious as is, but adding the peanut butter butter cups makes them that much more decadent, exciting, and delicious," says recipe creator Lindsay Freedman, the foodie behind The Toasted Pine Nut. "Plus, I’m all about the antioxidants in dark chocolate."

The best part? This recipe doesn’t require baking, so it’s easy to make last minute—which means you won't have to resort to re-gifting a mixtape Chandler-style, and can present these gems instead to your partner, BFF, or yourself. Consider it self love, in a dessert.

No-bake cookie dough bars

Yields about 12 squares

Ingredients
½ cup Justin’s Classic Almond Butter
¼ cup agave nectar
A splash vanilla extract
½ cup blanched almond flour
Pinch of sea salt
4 packs of Justin’s Dark Chocolate Peanut Butter cups
½ cup dark or semi-sweet chocolate chunks

Directions
1. In a food processor, place almond butter, agave nectar, vanilla, almond flour, and sea salt. Process until it begins to ball up. Scrape down the sides and process again to make sure everything is well combined. (If the dough seems dry, add another tablespoon of agave nectar.)

2. Add four Justin’s Dark Chocolate Peanut Butter Cups and process again to mix them in and chop them up a bit, about 5–10 seconds.

3. Line a baking pan with parchment paper and scoop the dough into the pan. Bunch up another piece of parchment paper and use it to press the dough down into the pan.

4. Melt the dark chocolate chunks in the microwave or in a double boiler over the stovetop.

5. Spread the melted chocolate across the top of the dough. Place four whole chocolate cups into the melted chocolate.

6. Pop the pan into the freezer for about 10 minutes or until the chocolate is hardened.

7. Pull the bars out of the pan by pulling up the edges of the parchment paper. Peel back the parchment paper and place them on a cutting board. Cut, serve, and dig in!
