There are a lot of different ways to use Thanksgiving leftovers that go far beyond shoving a mix of turkey, stuffing, cranberry sauce, and mashed potatoes between a few slices of bread. (Which is delicious, BTW.) Another is option is a simple recipe for loaf of bread that not only uses leftover sweet potatoes, but also the jar of peanut butter that's already sitting in your pantry.

While sweet potatoes and peanut butter might seem like a weird combo, the two make for a vitamin- and protein-packed loaf that's so yummy. "Each serving contains about 19 grams of carbohydrate and 2 grams of fiber, which is important when striving to maintain healthy blood sugars," says Amber Pankonin, RD, the registered dietitian and recipe developer behind Stirlist. "This bread also contains about 5 grams of protein per serving, which can contribute to fullness, making it a great breakfast or snack option."

Making Pankonin's Peanut Butter Sweet Potato Bread is easy. Because it requires a cup of mashed sweet potato, you can use what's leftover from your Thanksgiving plate (or mash up a new batch). After combining the sweet potatoes with flour, creamy peanut butter, eggs, and some warming spices, you'll be left with maybe the most delicious way to cut down on holiday food waste.
