Sometimes, you just really crave something sweet. But most of the time, you can’t afford the immediate urge to take a nap that follows (yes, the sugar crash is very, very real).
Blair Flynn of Balancewithb found the solution with her genius dark chocolate pudding that also takes your love for avocados to a whole new level. The dessert uses the green fruit as its fiber-rich base and Pyure Organic stevia for its subtle sweetness, so you get all the creamy goodness you want—without all the sugar.
“I had first tried avocado chocolate mousse at a plant-based restaurant, and fell in love at the first spoonful,” Flynn says. “I honestly couldn’t believe that avocados were the base of the dessert since it was so rich tasting, bursting with chocolate flavors, and had the perfect amount of sweetness. You’d never think that chocolate and avocados would pair well together, but you would be so surprised!”

With a history of gut issues like SIBO and IBS, Flynn has had to manage her sugar intake to avoid triggering stomach aches, which is why she’s all about swapping out regular sugar for stevia.
“I think it’s a great alternative to use in just about everything when I’m in the mood for something sweet, plus it doesn’t bother my stomach like most other sweeteners,” she says. “When using Pyure Organic Stevia, I never feel a sugar crash later on and find myself completely satisfied just after a few bites.” As if we needed a reason to eat more avocados.

In your food processor or blender, add all of the ingredients and blend until smooth and creamy.
Taste test and adjust to your needs. If you are looking for a deeper chocolate flavor, add in more raw cacao powder. If you prefer the pudding to be on the sweeter side start with 1/2 Tbsp of stevia and taste test as you add. Remember, Pyure Organic Stevia Blend is two times sweeter than refined sugar, so you will only need about half the amount you would normally use if sweetening with sugar.
Divide evenly into small dishes and top with desired toppings. Either serve immediately or allow to chill in the fridge for 30 minutes or freezer for 5 minutes for a firmer texture.
Store in an airtight container in the fridge for up to three days.
