How To Make an Anti-Inflammatory Plant-Based Latte in Your Blender

It’s often assumed that making the perfect latte requires having an espresso machine and a fancy milk frother. But what if you don’t own either? Actually, all you need is a blender. This anti-inflammatory plant-based latte from Rainbow Plant Life will make you feel warm and cozy without leaving the house.

The recipe, by vegan chef and blogger Nisha Vora, who runs Rainbow Plant Life, puts a healthy (and convenient) spin on the fancy lattes we love so much. Taking a total of 20 minutes to whip up, this sweet and spicy almond butter date latte is good for you and sweetened solely with the fruit. “These sweet and sticky gems are perfect in this recipe, but if you can’t find Medjool dates, you can use the smaller Deglet dates." She adds to "keep in mind [that] they’re not very soft, so you might need to blend the latte longer, especially if you don’t have a powerful blender. Also, you’ll want to use more than two since they’re smaller in size.” Medjool dates, and dates overall, are known for being high in antioxidants and having anti-inflammatory properties.

When it comes to another main ingredient that it takes to make this latte perfect—the milk—Vora suggests using oat milk, but notes if you have any sensitivity to oats or want to make it make it Paleo-friendly, coconut, cashew, or macadamia milk are great alternatives.

Sweet and Spicy Almond Butter Date Latte

Ingredients

1 ½ cups unsweetened oat milk
2 Tbsp creamy almond butter
2 soft, large(ish) Medjool dates, pitted and torn in half
½ tsp ground cinnamon, extra for dusting on top
Pinch of cayenne pepper
1 large strip of orange peel
1 tsp vanilla extract
¼ - ½ cup strongly brewed hot coffee

1. Add oat milk, almond butter, dates, cinnamon, cayenne, orange peel, and vanilla to a small or medium saucepan. Bring to a rapid simmer and maintain for 10 minutes, occasionally whisking.

2. Remove the milk from the heat and transfer it to a high-powered blender. Remove the center cap of the blender and cover with a dish towel to allow the steam to escape. Blend on high until mixture is very smooth and creamy, and the dates and orange peel are pulverized. Taste and adjust flavors as necessary.

3. Brew your hot coffee into a mug and then pour in the almond butter date milk. Sprinkle with a touch of cinnamon and enjoy!
