What makes this pot so special is that it has a synchronized time and temperature water heating system that keeps the water used to brew coffee consistent from the start to finish. This helps to bring out the natural flavors in the coffee—mocha java tastes rounder and more full-bodied; light acidic roasts reach their full brightness—and keeps away that bitter after taste that can sometimes come from pots that start off utilizing colder water at the beginning of the brew and finish off with scalding water at the finish.

Another important aspect of the brewing process is that the water evenly soaks over the entire basket of beans, so that it utilizes all of them for full flavor, and not just the ones at the bottom of the basket. Again, this helps with taste—and ambition—as you're getting the most out of the coffee that you use. I find that when I use the machine, my coffee beans even last longer because I'm not being forced to up the quantity of coffee to get the caffeination that I like.

While this calibrated coffee creation seems like it might take extra time to finesse, the brewing process when using the Moccamaster is actually surprisingly speedy—the whole shebang takes five to six minutes flat. However, if you are anything like me and you need a jolt as soon as your feet hit the floor in the morning, you'll enjoy the fact that there's a full-drip stop switch that allows you to steal a quick cup of coffee before the whole pot is brewed. A hot plate stays on for an hour to heat the pot, and then switches off for safety.

Best of all, this Netherlands-made machine looks surprising good on your counter, in a way that most coffee pots don't. It has a modular design that looks and feels really modern, and beyond that, it comes in a rainbow of colors that can make it feel more at home in your kitchen. I like mine so much that I got my brother one for Christmas last year, and after his first cup, he texted me: "Noticeably better coffee this morning, thanks!" Which I'll take to mean that like Dolly, I got it right.
