The secret to making a decadent low-sugar, vegan dessert

As a Muay Thai fighter, Watt Sriboonruang has perfected the food-as-fuel method to keep her body in fighting shape. She started her next-level raw and vegan pie company, Rawsome Treats, a few years ago when she was trying to cut weight for an upcoming rumble. But there was something else she was fighting: her sweet tooth. 

Four years of experimenting with raw, vegan ingredients have resulted in a full lineup up healthy desserts that are Paleo-friendly and free of gluten, soy, and refined sugar. She’s also taken her business to the next level, opening her first brick-and-mortar earlier this month. Flavors range from classics like pumpkin pie and tiramisu to more uniques recipes like a matcha-inspired pie and persimmon pie. Here, she shares a recipe for vegan truffles that she relies on for a healthy, high-protein snack: “I like to eat these after working out or to tackle my hunger during the day,” she says.

Pecans, dates, and protein powder come together to form the sweet base, while chia seeds and hemp seeds add an extra punch of protein. Sriboonruang suggests rolling the balls in the protein powder, chia seeds, and hemp seeds but you can also add goji berries, freeze-dried raspberries, matcha green tea powder, cacao powder, coconut flakes, or sesame seeds.

Pro tip: “To get the truffles fully covered by the coating, immediately coat each truffle after rolling,” recommends Sriboonruang.

Instructions

  1. Soak dates in warm water for five to ten minutes, longer for dry dates. Drain.

  2. Add all ingredients to a food processor. Blend well, until the mixture becomes pasty.

  3. Using your hands, roll the mixture into bite-sized balls.

  4. If coating the balls: Add ingredients to a bowl or plate. Roll the truffles in the mixture until completely coated.

  5. Store truffles in an airtight container in the fridge up to two weeks.
