  • garlic
    1 clove garlic minced
  • fresh ginger,
    1 inch fresh ginger, finely minced
  • rice vinegar
    1 tsp rice vinegar
  • lime juice
    2 tsp lime juice
  • soy sauce
    2 tsp soy sauce
  • gochujang, Korean red chile paste, or miso paste
    2 Tbsp gochujang, Korean red chile paste, or miso paste
  • brown sugar
    1 tsp brown sugar or coconut sugar
  • salt
    tsp salt
  • freshly ground black pepper
    3–5 cranks freshly ground black pepper add more to taste

Garnishes

  • bibb lettuce
    4-6 leaves bibb lettuce plus more for wrapping
  • cilantro
    cup cilantro leaves only
  • radish,
    1 radish, thinly sliced
  • white sticky rice
    1 cup white sticky rice cooked
  • kimchi,
