Proof: Sweet Potato Toast Is the New Avocado Toast

If you're on Instagram, you've probably noticed that a new kind of toast has been popping up all over your feed: the sweet potato kind.

Yup, bread is left entirely out of the equation in this buzzy brunch staple, instantly upping the nutrition factor with a low-glycemic veg packed with potassium and vitamin C.

And let's not forget the wow factor: creamy vanilla siggi's yogurt, which provides the just-sweet-enough topping for a genius flavor combo. (Not to mention, it's made with simple ingredients and not much sugar—unlike some other spreads out there.)

If you think it sounds weird, cookbook author Sara Forte (of Sprouted Kitchen fame) provides a foolproof recipe that will make you a believer—adding crisp apples, a sprinkling of crunchy walnuts, and a pinch of sea salt for a result that's begging to be 'grammed (and eaten).

Cinnamon + Paprika Sweet Potato Toast with Vanilla siggi's Yogurt

Serves 2

Notes
Try to start with a sweet potato that is a consistent width—this makes for an even toast.

Ingredients
Sweet Potato Toast
1 sweet potato
1 Tbsp olive oil
1/4 tsp paprika
1/2 tsp cinnamon
1/4 tsp sea salt, plus more to finish

Toppings
Vanilla siggi's yogurt
Toasted walnut pieces
Apple slices

Directions
1. Slice the potato into 1/4-inch slices, lengthwise.

2. In a small ramekin, mix the oil, paprika, cinnamon, and sea salt together. Brush it on both sides of the slices of sweet potato.

3. Toast (in an upright toaster or toaster oven) for about 7–10 minutes, until golden brown and just tender (but still holding shape).

4. With your toast on a plate, garnish with a generous scoop of vanilla siggi's yogurt, toasted walnuts, apple slices, and another sprinkle of salt to finish.
