The company recently announced plans for a major expansion thanks to an outside $14 million investment. Not only is Veggie Noodle Co. increasing its 200-member staff by 25 percent, but it's also getting a new plant that's three times bigger and will be able to increase production capacity by more than fivefold.

The products are currently sold in around 2,000 stores across the country, but hopefully this news means you'll be able to snatch them from shelves beyond main retailers, like Whole Foods and Target.
