In the borough of Brooklyn, where artisanal bacon and culinary cocktails rule the food scene, juice bars have started to make their cold-pressed presence known.

"It all comes down to making quality juice and healthy eating accessible to everyone," says Summers juice bar co-owner Christopher Taha. "Brooklyn is ready and eager." (That goes for the borough's boutique fitness renaissance, too.)

Like Summers, most of Brooklyn's juice bars are small-batch producers with outer-borough charm, and not the bigger brands like Organic Avenue and Juice Generation, which cover Manhattan.
