Right now, there are 10 locations coast-to-coast in the United States, as well as a London restaurant that opened in February, all hawking colorful salads and bold vegan burgers. But according to co-founder and creative director Samantha Wasser, the plan is to open 20 more in the US, throughout Europe and the Middle East, including additional locations in London and the chain's first spot in Dubai, using the investment from Bain Capital, Kitchen Fund, Collaborative Fund, TGP International/Qoot International, and others.

"The goal from day one was to bring vegan food to the masses and make it as accessible and as fun as possible," Wasser told Moneyish. "When we were first talking about the concept, our CEO was like, ‘I don’t understand how you can be successful; there’s not that many vegans in the world.' But we don’t go out there and target only vegans. We created a brand that speaks to everyone and isn’t intimidating."
So, the good news? You can soon get your vegan food fix at home and so many places abroad. And the bad? Since Coscarelli—who co-founded her namesake restaurant with Wasser—is no longer involved with the company after cutting ties last year due to an ongoing legal dispute, you won't be seeing any of her new recipes on the menu. But if you're hoping to try new editions of her fun vegan eats, you'll be happy to hear she's working on new café project in Miami that sounds more than worthy of a trip to the Sunshine State.
