Background on the viral dill cucumber sandwich trend

In a recent TikTok video by @averyhittcoble, Avery Hitt Coble shares her super simple recipe for a flavor-packed cucumber sandwich. But before she makes it, Coble starts by acknowledging that pretty much everyone on TikTok has been making cucumber sandwiches the last few weeks. The viral sandwich—and the basis for this recipe—typically consists of bread, a creamy spread, and thinly sliced cucumbers seasoned with herbs like dill. However, Coble’s sandwich takes things up a notch—with loads of vibrant, nutrient-rich fresh veggies.

In her iteration of the cucumber sandwich trend, Coble adds bell peppers and tomatoes into the mix, which make the dish look like the colors of a rainbow and bring a boatload of additional nutrients. Since the video was published, it has garnered nearly 900 million views and 80 thousand likes.

How to make the dill cucumber sandwich recipe

To make the sandwich, Coble suggests starting with your bread of choice (in the video, she uses potato bread). Then, she gathers the additional ingredients, including mayonnaise, tomato, sweet onion, yellow pepper, red pepper, cucumber, dill weed, and Lawry’s Seasoned Salt. Next, Coble gets her mise-en-place ready by prepping her ingredients: She peels the cucumbers and slices them thinly, then cuts the peppers, onions, and tomatoes into thin strips.

Once the ingredients are all ready, Coble generously slathers mayo on the two loaves of bread and layers the cucumber, followed by the tomatoes and onions (one on top of the other on one of the bread slices) to create different levels of flavor. Then, she sprinkles a generous amount of dill weed and Lawry’s seasoning salt over the fresh veggies and continues by adding the thinly-sliced bell peppers (followed by another coat of dill weed and seasoning salt). Lastly, she plops the remaining slice of bread over the veggies and gently presses down to compress the sandwich together, and cuts it on the diagonal. Arguably the best part, however, is Coble’s reaction upon the first bite: the face of pure bliss and happiness.

What makes this veggie sandwich so good for you?

When you break down the components of this dish, it’s impossible to ignore its many dill benefits for health. For starters, cucumbers are filled with antioxidants, anti-inflammatory vitamins, and minerals that help combat oxidative stress and inflammation in the body. And this highly hydrating veg is also filled with loads of potassium linked to regulating fluid balance and lowering blood pressure. Plus, fiber-rich tomatoes and bell peppers are great sources of lycopene, an anti-inflammatory plant compound known to boost heart health and longevity (and the reason why they sport such a vibrant, beautiful hue).
