VegduckenTurducken (a chicken stuffed into a duck stuffed into a turkey) is over-the-top meat-eating embodied in a meal.

But a food writer at Epicurious has now taken the ludicrous concept and turned it into a vegetarian main dish that’s perfect for Thanksgiving. Craziest of all is that it actually sounds pretty amazing.

The Vegducken is a zucchini stuffed in an eggplant stuffed in a butternut squash, and it’s bound to taste about a million times better than Tofurkey. It even includes veggie “stuffing” and butter-herb “gravy.” Your dinner guests (yes, even the lifelong carnivores) are going to be so blown away on November 26.
