If there’s anything everyone needs right now, it’s meals that are both comforting and easy to make. Sure, some days it’s nice, therapeutic even, to spend hours in the kitchen. But other times, you just want to eat something that hugs you from the inside sooner rather than later.

There are actually a whole lot of healthy, easy comfort recipes, all of which depend solely on cheap pantry items. (Getting to the store for fresh food is a challenge right now, to say the least.) Rounded up here are seven to try. Bonus: Each one makes several servings, so you can feed a whole house full of mouths or save the leftovers in the fridge for later.

1. Chickpea lasagna with vegan cheese

Besides being gluten-free and vegan, this lasagna is full of fiber because of the chickpea lasagna noodles and veggies. Canned vegetables work just as well as fresh ones for what’s listed in the ingredients list, so feel free to swap out as needed.

2. Creamy polenta

All you need to make this creamy dish is cornmeal, a couple tablespoons of butter, salt, pepper, and water. It’s rich and satisfying all on its own, or you can use it as a base for another one of its pantry companions, like roasted chickpeas or canned veggies.

3. Chickpea curry

Creamy coconut milk, hearty rice, and nourishing chickpeas combine to make this comforting dinner. Canned (or frozen) veggies work just as well as fresh, so use whatever you have. Pantry spices are key for perfecting this curry dish; don’t be afraid to go heavy on the turmeric, ginger, and curry powder.

4. Curried tomato lentil soup

Use lentils, coconut milk, and canned tomatoes as the base for this velvety soup, adding in your favorite spices while it simmers on the stove. Warming spices, like ginger and curry powder, will especially make it taste flavorful and restoring.

5. Black bean soup

For a hearty soup with a completely different flavor profile, reach for your black beans and vegetable broth. This one is topped with sour cream, but it tastes great without it, too. Or, you can use canned coconut milk instead.

Rice and beans are a classic duo and besides being a warming dish, you’ll actually feel energized from the healthy fiber and plant-based protein. Often, keeping it simple works best!

7. Baked vegan mac-and-cheese

What would a healthy comfort food recipes roundup be without mac-and-cheese? This one uses gluten-free noodles, but of course any pasta or alt-pasta will work. The “cheese” is made with potato, nutritional yeast, nut milk, tahini, apple cider vinegar, garlic powder, and salt. When blended together, they make a creamy sauce that will satisfy just the way you want it too.
