This recipe only requires five ingredients: carrots, olive oil, maple syrup, hot sauce, and salt. The combo of the hot sauce and the maple syrup adds the perfect hot-sweet flavor to your roasted carrots (which, like many other vegetables, sweeten when roasting). Plus, the recipe is vegan and gluten-free, making it a great simple side dish that can make many different kinds of eaters happy. In the end, you'll have a delectable side dish for lunch or dinner. Julia Turshen's easy roasted carrots with maple syrup and hot sauce
Makes 4 servings
8 medium carrots, peeled, cut into 2-inch pieces
2 Tbsp extra-virgin olive oil
2 Tbsp maple syrup
1-2 Tbsp hot sauce of your choice
1/2 Tsp kosher salt, plus more to taste
1. Preheat your oven to 425ºF.
2. Place the carrots on a sheet pan and drizzle with the olive oil, maple syrup, and hot sauce. Sprinkle the salt on top and use your hands to mix everything together. Roast, stirring now and then, until browned and tender when tested with a paring knife, about 30 minutes.
3. Serve hot or at room temperature.
