Sweet Potato Collagen Waffles
Even the most serious cases of Sunday Scaries can be squashed when you know waffles are on the menu Monday morning. Bonus: They’re comfort-food-level good and packed with hearty ingredients like chia or flax seeds for omegas and collagen to promote healthy skin.

Notes*To make one chia egg, mix 1 Tbsp flaxseed meal or chia seeds with 2.5 Tbsp water, and let sit for 5 minutes to thicken.
Ingredients
Sweet potato collagen waffles1 box Simple Mills Pancake and Waffle Mix
5 flax or chia eggs*⅔ cup milk or water3 Tbsp coconut oil⅓ cup + 1 Tbsp mashed sweet potato¼ cup collagen powder
Creamy, dreamy topping½ cup coconut cream2 Tbsp cocoa powder1-1 ½ Tbsp maple sugar
1. Whisk eggs, milk, oil, and sweet potato in a large bowl. Add the waffle mix and collagen, whisking until well combined.
2. Pour batter onto pre-heated waffle iron and cook on high, according to waffle-iron instructions.
3. Mix topping ingredients together in a bowl and add a dollop to your waffles, or drizzle with honey and add a dash of cinnamon. Dig in!
