This Vegan (and Super Creamy!) Pasta Recipe Is the Perfect 10-Minute Weeknight Meal

The next time you get home feeling way too exhausted to cook, drop the takeout menu. There's a ridiculously creamy dairy-free pasta dish you can whip together in minutes with hardly any effort whatsoever. And it's better than anything you'll get delivered to your door, guaranteed.

Ella Woodward, the food blogger behind Deliciously Ella, is the first to admit she's completely infatuated with her miso mushroom noodles—especially because they only take a handful of healthy ingredients to make. "It's my new obsession. It's the perfect 10-minute meal," she writes on Instagram. So, what exactly does this mix include? Some staples you probably already have in your home.

To create the vegan dish, first prepare a couple packs of ramen noodles in boiling water. Then after slicing up a container of mushrooms, sauté them in a skillet using a little olive oil, salt, and pepper. Next, add a tiny bit of sesame oil—which "adds a lovely flavor"—and let it cook for a minute.

Now comes the creamy goodness: Stir in half a can of coconut milk and two "really generous" spoonfuls of peanut butter (twist!). Then add in a squirt of lime, a pinch of cayenne pepper, and a teaspoon of brown rice miso. After mixing in a handful of scallions and letting them cook for another minute, drain the noodles and add them into the sauce.

Now that your creamy pasta is complete in record time, fill a bowl and load up on some extra goodies: "When you're plating up, top your dish with a couple more scallions, a little bit of fresh chili pepper, and some sesame seeds for a bit more color and texture," Woodward says. You'll be left with a filling meal that's not only nutritious, but also all sorts of satisfying.
