He also has a new partnership with Vita Coco Sparkling, which Porowski says he's pretty jazzed about because it combines two of his hydrating faves: coconut water and bubbles. "I've been obsessed with sparkling water ever since I started drinking it back when I stopped drinking soda," he says.
As for his New York City restaurant, it's opening "soon-ish," he tells me—sometime in the next few months. (And the exact location is still under wraps.)
"I'm super excited about it," he says. "The cookbook I'm working on is more my decadent side and also autobiographical, showcasing the foods I had growing up, what I made when I was in college and broke, and what I like to make now when I entertain with friends. But the restaurant is health-forward."

Porowski says his personal dietary habits are a combo of a ketogenic, Paleo, and vegan-ish diet. For him, it's a lot of vibrant veggies, healthy fats, and protein. "My days—especially right now—are super long. I'm up at 5 a.m. and going for 12 or 14 hours, so I need food that will give me energy," he says.
It was with this in mind that he crafted the menu for his new restaurant, which he says is fast-casual and is perfect for stopping in after a workout. "It's very fresh and market-driven. I love to accentuate one or two ingredients in a dish, really making them the stars of the meal. And I also wanted everything to be very accommodating and not intimidating."
The only way this could get more perfect? If Jonathan opened a salon next door.
