You’d think nothing could top unicorn toast when it comes to beautiful healthy breakfasts. But Adeline Waugh of Vibrant and Pure went and did it again, creating another plant-based colorful food trend. Presenting: mermaid toast.

Waugh unveiled her latest creation on Instagram just 24 hours ago, and it already has almost 3,000 likes. “I used a variety of blue algae powders and liquids mixed with almond milk cream cheese to create this ocean-inspired toast,” she captioned her breakfast masterpiece.

Unfamiliar with blue algae’s healthy benefits? The buzzy anti-inflammatory ingredient has over 65 nutrients and it’s full of antioxidants. (You know those beautiful blue lattes popping up at hot spots like The End and The Good Sort? Same nutritious goodness.)

The more healthy eaters like Waugh play with their food, the more the rest of us get to reap (and eat) the benefits. The big question is, what’s next?

Zoodles are also a ton of fun to make—and they pair nicely with anti-inflammatory turmeric. And if you don’t have a spiralizer, here’s how to get your vegetable noodles delivered.
