The hot wellness mecca known as The Standard Spa, Miami Beach is no stranger to beautiful people. The outsize indoor hammam, outdoor hydrotherapy “playground,” and brand spanking new Juice Cafe practically draw radiant-from-green-juice-and-yoga types there like moths to a flame whenever they need to relax.
At the center of it all is Mina Gough, the Standard spa director for the past six years. In addition to than curating the forward-thinking menu of services, which include botanical facials to “celestial guidance,” Gough works directly with the property’s head chef Mark Zeitouni, to ensure that the Juice Cafe’s menu is as wellness-minded, too.
“We experiment with combinations every few weeks,” Gough explains. “Then, Chef Mark gives the recipes the perfect twist. The final step is a Spa Team tasting.” (A good day at work, no doubt.)
The Kale Avocado Smoothie is a result of Gough’s and Zeitouni’s experiments, and “an obvious guest favorite.” She personally loves it for its beauty-boosting benefits.
“Green veggies and fruit are rich in flavonoids and carotenoids, both antioxidants to help keep skin clear,” she explains. “Greens are also anti-inflammatory. Kale, specifically, is a terrific source of vitamin A, which is essential for skin repair, reducing spots, and blackheads, and neutralizing acidity,” she adds. And avocado provides healthy skin-nourishing essential fats that are key a healthy glow.

Avocado Kale Smoothie
(Makes two big servings, approx. 32 oz.)
2 cups filtered water
1 cup lime juice
1 small bunch of kale
1 ripe Hass avocado
1/2 bunch cilantro
2 Tbsp agave, optional
2 Tbsp chia seeds
Add all items above into a blender except the chia seeds. Blend completely until dissolved into a smooth consistency. Then, add chia seeds and stir. Pour into a container and refrigerate completely before sipping.
