Use this sweet potato toast hack for next-level gluten-free appetizers

There’s nothing worse than hitting the appetizer spread at a party only to find that pretty much everything will make you feel like you have to unbutton your jeans as soon as you get into your car.

The solve? BYOA. Bring your own app, of course. With this delish sweet potato toast recipe from Anna Brown of Nutrition Squeezed, your dish won’t be shunned as the “healthy” one on the table—everyone will want to dig in.

“I wanted a holiday appetizer that looks pretty, tastes delicious, and doesn’t make you feel like you’re overindulging at a holiday party,” Brown says. “Baked brie is one of my all-time favorite holiday appetizers, but it can feel so heavy after just a few bites. So this is my fun and gluten-free take on it.”

If you’ve ever tried to make your own sweet potato toast at home, you know it often ends up in #PinterestFail territory.

Her hack for whipping up the brie-topped hors d’oeuvre in half the time? Using Sweet PotaTOASTS, which are frozen slices of pre-roasted sweet potatoes. Because if you’ve ever tried to make your own sweet potato toast at home, you know it often ends up in #PinterestFail territory.

Sweet PotaTOASTS, which are sisters to CAULIPOWER’s genius cauliflower pizza crusts, are the nutrient-boosted canvas for anything you would normally use toast for. And with no preservatives or additives, they check all the dietary boxes from gluten-free to vegan to paleo.

“My grandfather has celiac disease, and many of my family members don’t eat gluten, so these will be perfect for them. Plus, they were so easy to make compared to homemade sweet potato toast,” Brown says. “The holidays are already crazy enough, so making fun appetizers for your holiday party shouldn’t create added stress. These Sweet PotaTOASTS are about as simple as it gets, while still capturing that festive spirit.”

Ingredients

Sweet Potato Toasts

Cranberry Chia Jam

  • fresh cranberries
    2 cups fresh cranberries
  • water
    1/2 cup water
  • maple syrup
    2 Tbsp maple syrup
  • chia seeds
    1/4 cup chia seeds

Instructions

Sweet Potato Toasts

  1. Preheat oven to 350° F.

  2. Lay 12 Sweet PotaTOASTS out evenly on baking sheet (no oil needed!). Bake for 12 to 15 minutes, flipping once.

  3. While they bake, slice brie into 12 small slices, about ½ inch thick.

  4. Remove Sweet PotaTOASTS from oven, and place one piece of brie on each slice. Return to oven, and bake for another five minutes, until the cheese is melted.

  5. Remove from oven, and promptly spoon one tablespoon of cranberry chia jam on each slice of Sweet PotaTOASTS, on top of the brie. Sprinkle with walnut crumbles and garnish with a sprig of thyme. Serve warm.

Cranberry Chia Jam

  1. In a medium saucepan, combine cranberries, maple syrup, and water, and simmer on medium low until the cranberries burst and take on a jammy consistency. (It helps to stir and pop the cranberries with a wooden spoon.)

  2. Stir in chia seeds and remove from heat. Let sit for five minutes before spooning into a mason jar.

  3. Refrigerate for at least 30 minute before serving. Makes eight ounces.
