"Baked brie is one of my all-time favorite holiday appetizers, but it can feel so heavy after just a few bites. So this is my fun and gluten-free take on it."

Baked Brie Sweet Potato Toasts with Cranberry Chia Jam

Ingredients

Sweet Potato Toasts

Cranberry Chia Jam

  • fresh cranberries
    2 cups fresh cranberries
  • water
    1/2 cup water
  • maple syrup
    2 Tbsp maple syrup
  • chia seeds
    1/4 cup chia seeds

Instructions

Sweet Potato Toasts

  1. Preheat oven to 350° F.

  2. Lay 12 Sweet PotaTOASTS out evenly on baking sheet (no oil needed!). Bake for 12 to 15 minutes, flipping once.

  3. While they bake, slice brie into 12 small slices, about ½ inch thick.

  4. Remove Sweet PotaTOASTS from oven, and place one piece of brie on each slice. Return to oven, and bake for another five minutes, until the cheese is melted.

  5. Remove from oven, and promptly spoon one tablespoon of cranberry chia jam on each slice of Sweet PotaTOASTS, on top of the brie. Sprinkle with walnut crumbles and garnish with a sprig of thyme. Serve warm.

Cranberry Chia Jam

  1. In a medium saucepan, combine cranberries, maple syrup, and water, and simmer on medium low until the cranberries burst and take on a jammy consistency. (It helps to stir and pop the cranberries with a wooden spoon.)

  2. Stir in chia seeds and remove from heat. Let sit for five minutes before spooning into a mason jar.

  3. Refrigerate for at least 30 minute before serving. Makes eight ounces.
