Watermelon and Grilled Halloumi Salad with Hemp Hearts

Ingredients

The Salad

The Dressing

  • white wine vinegar
    2-3 tsp white wine vinegar
  • lemon
    ½ medium lemon juiced
  • orange
    ½ medium orange juiced
  • honey
    1-2 tsp honey
  • sea salt
    generous pinch sea salt
  • Zest of ½ lemon
    Zest of ½ lemon
  • Zest of ½ orange
    Zest of ½ orange
  • olive oil
    ¼ cup olive oil
  • fresh basil,
    ¼ cup fresh basil, chopped
  • fresh mint,
    ¼ cup fresh mint, chopped

Instructions

  1. Cook the farro. Set aside.

  2. Prepare the dressing by adding all the ingredients into a small bowl and whisk until well combined. Taste the dressing to see if you’d like to add more citrus, sea salt, or honey. Set aside.

  3. Cut watermelon and avocado into bite-sized cubes. Set aside.

  4. Cut the halloumi into bite-sized cubes. In a medium size pan on medium-high heat, sauté the halloumi slices on each side until it becomes golden and crisp, about 3-4 minutes each side.

  5. Add the cheese to a large mixing bowl with Manitoba Harvest Organic Hemp Hearts and the rest of the watermelon-farro salad ingredients.

  6. Pour a few spoonfuls of the dressing all over the salad and mix until everything is well combined. Enjoy!
