Cook the farro. Set aside.

Prepare the dressing by adding all the ingredients into a small bowl and whisk until well combined. Taste the dressing to see if you’d like to add more citrus, sea salt, or honey. Set aside.

Cut watermelon and avocado into bite-sized cubes. Set aside.

Cut the halloumi into bite-sized cubes. In a medium size pan on medium-high heat, sauté the halloumi slices on each side until it becomes golden and crisp, about 3-4 minutes each side.
