You might think the styled-up life of a recipe developer involves hours in the kitchen and photo-worthy dinner spreads every night—but a peak into the life of food-focused wellness blogger Courtnie Hamal would quickly flip that notion.

With two jobs and a side hustle (she works as a valet and yoga instructor while also managing Wellness with Courtnie), she can’t always craft the photogenic meals you see on her Insta, and there are definitely nights when she falls back on eggs and avo toast for dinner. (Wellness bloggers, they’re just like us.)

“A lot of times I’m rushing from teaching yoga to my valet job and only have a few minutes to prepare a meal, so I always make sure to have food stocked in my kitchen that I can whip up quickly,” Hamal says. “Fried eggs and avocado toast always comes in handy.”

If all you have on hand is a can of beans and a random assortment of veggies, you can still make this seriously colorful meal—and you don’t even have to turn on the oven (a life-saver on hot summer days).

“I don’t really measure anything or use fancy sauces or seasonings,” she says. “You don’t have to be a chef to make beautiful and delicious food. I’m all about sharing how easy and accessible eating healthy can be.”

Ingredients

3 grain free tortillas
1 cup organic black beans
¼ cup finely chopped red onions
¼ cup cubed mango
¼ cup chopped purple cabbage
½ cup mashed avocado
¼ cup cubed grapefruit
1 small heirloom tomato, finely chopped
1 small handful fresh cilantro, finely chopped
Salt and pepper, to taste

1. In a medium-sized bowl, combine onions, mango, purple cabbage, tomato, cilantro, salt, and pepper.

2. Heat tortillas in a small pan over low heat.

3. Once tortillas are warm add black beans, salsa mixture, and mashed avocado on top.

4. Add salt and pepper to taste. Enjoy!
