Blend banana, oats, maple syrup, almond milk, baking powder, and Youtheory® Vanilla Collagen Powder in blender until well combined.
Grease nonstick skillet or griddle and keep on medium heat.
Use 1oz of pancake batter to form each pancake, alternating between topping with strawberries, blueberries, or coconut flakes.
Cook 2-3 minutes on the first side, flip, then cook another 2-3 minutes.
Remove from heat and stack on plate. Top with maple syrup and other accompaniments, if desired.
