This Cauliflower Crust Grilled Cheese Is Next-Level Comfort Food

It doesn’t matter how old you are—nothing beats an ooey, gooey grilled cheese. That said, there’s nothing wrong with making a few updates—especially that upgrade it into a healthy dinner.
This grown-up grilled cheese uses a pre-made cauliflower crust that in addition to being gluten-free and keto-friendly, packs an extra serving of veggies and contains just 80 calories. Plus, it “adds a nice crunch while allowing the sandwich to stay chewy on the inside,” notes recipe developer and Well+Good video producer Ella Dove.
The only tricky part is defrosting the cauliflower crust, she says. “Mine cracked the first time I tried it, so I recommend cutting the crust into quarters with a sharp knife and then popping it in the oven for a quick defrost before using it.”
Adding grainy mustard and avocado to classic cheddar cheese elevates the childhood favorite for a more sophisticated palette (and adds more nutrients). Ingredients
- 2 wedges cauliflower pizza crust (defrosted)
- 2 thick slices white cheddar cheese (or vegan cheddar cheese)
- 1 Tbsp grainy mustard
- 1/4 sliced avocado
- 1 tsp olive oil
Instructions

Cut the cauliflower crust into quarters and brush with olive oil.

On one quarter of the crust, layer the mustard, cheese, and avocado. Top with the other crust to make a sandwich.

In a cast iron skillet over medium heat, heat olive oil. Add sandwich and cook until underside is browned and cheese has started to melt, about three minutes. Flip and cook until both sides are browned and cheese is melted, about three minutes more.
