When Emmy Rossum‘s sweet tooth strikes, she whips up some of her favorite baked goods. And nope, her go-to recipe isn’t jam-packed with cup upon cup of sugar, either. In fact, it doesn’t even include a trace of the white grainy stuff. Instead, the actress depends on a couple natural alternatives that are sure to satisfy your cravings just as well—if not better!—than the real thing.
On her Instagram Story, Rossum let her followers in on the recipe for her adorable Paleo blueberry mini muffins, which only take 20 minutes to make and are filled with a list of wholesome, body-friendly ingredients. In place of sugar, Rossum sneaks in a couple of other options to keep the mix drool-worthy to the extreme: unsweetened applesauce and monk fruit—a nutritionist-approved option that’s 200 times as sweet as sugar without the negative side effects.

Hungry yet? Well, to create these mini muffins for yourself, prepare to enjoy the easiest recipe ever. First, gather the ingredients—plenty of which are probably already stocked your kitchen: 1 and 1/3 cups almond flour, 2 scoops collagen peptides, 1 Tbsp cassava flour, 1/2 tsp baking powder, 1/8 tsp sea salt, 1/2 tsp monk fruit, 1 cup fresh blueberries, 2 large eggs, 2/3 cup unsweetened applesauce, 1 tsp apple cider vinegar, and 1 tsp vanilla extract. Next, put everything in a bowl and mix it up.
After spraying a flexible mini-muffin mold with olive or avocado oil, fill it up and pop it in the oven at 350°F for 20 minutes or “until a chopstick comes out clean,” she writes. After letting them cool, Rossum recommends storing them in an airtight container or freezing them for later. Either way, you’ll have cute little Paleo-friendly and sugar-free muffins in spades for the ultimate snacking sesh.
